Flac is an audio format that prevent the loss of quality but its lighter than an average WAV file.
FLAC stands for Free Lossless Audio Codec. It means that its similar to a MP3 but the quality is generally better.
FLAC is freely available and supported on most operating systems, including Windows, "unix" (Linux, *BSD, Solaris, OS X, IRIX), BeOS, OS/2, and Amiga.
What do I mean when I said its OPEN and FREE I mean that the specification of the format is fully open to the public to be used for any purpose (the FLAC project reserves the right to set the FLAC specification and certify compliance), and that neither the FLAC format nor any of the implemented encoding/decoding methods are covered by any known patent. It also means that all the source code is available under open-source licenses. It is the first truly open and free lossless audio format.
mkv
MKV file extension is one of the new file extension for videos used nowadays, its a good format and more commonly used in anime than in movies in general. Its as said on ther main website (www.matroska.org) a container its not a codec format like MPEG, Xvid or DivX so the only software you need is one that knows that.

SRT
SRT is a text subtitle file, you have to use it with a movie and its usually synced to match a particular movie (not all only the one that those subtitles file were created for).
If you want to open it and modified or sync them, try using subtitle workshop, its one of the best free application to work with subtitle files.
If you only wanted to open the file with a movie, you will have to use the movie player you are actually using and in the options->subtitle->open and then select the subtitle file with the srt extension that is for that particular movie
flv
FLV stands for Flash Video its a video encoded to use by a flash player (even though now most players supports the playback of flv files).
Its usually very compressed and with a not so good quality. The most common codec used is H264 which is one great codec to compress your home videos.
To open you will need any of the most common and popular video players as GOM Player or Media Player Classic
MP4
MP4 is a file extension created to mean that the video inside is encoded with 'MPEG-4'. You can play MP4 files with various players. For example GOM Player or Media Player Classic.
So please do not use Windows Media Player for this files as it's very slow and works very badly.

VOB
VOB files are generally located inside a Video DVD (movies). They are pure video files and they are know also as "DVD Video Movie File" (does not include the audio, only the video).
You don't want to open them you simply want to play it on you favourite video player (I do recommend GOM player).
Maybe you want to rip it (extract it contents, merge it with the audio) and then burn it into a dvd only with the content you want (only one language). For that you need another kind of software, for example SmallSoft video Ripper. Of course you need to have the original to make a backup. Support the movie companies that makes good movies :)
mp3
MP3 file extension is one of the most common file extensions. If holds highly compressed music, it also strips parts of the wave the human hearing cannot distinguish.
As WAV files are the raw audio, MP3 files only holds the information you need, you can hardly distinguish the difference in quality so you don\'t have to think it twice, use MP3.
Nevertheless MP3 license is not open, so you better watch out if you are a software developer using a MP3 music file inside, if you need a open source format please see the OGG music format called Vorbis which is free a in most cases even better than MP3.
